Chinese Watercress Soup Recipe

Ingredients

 
4 cups chicken broth (freshly made, canned, or made from chicken stock concentrate)
 
3 tablespoons shredded cooked lean pork
 
1/4 cup finely sliced celery, cut on the diagonal
 
1/4 cup sliced water chestnuts or bamboo shoots
 
2 green onions, thinly sliced on the diagonal
 
1 tablespoon soy sauce
 
1 cup watercress leaves, packed

Directions

Combine chicken broth, pork, celery, water chestnuts or bamboo shoots, green onions, and soy sauce; bring to boiling.
Simmer for 5 minutes; add watercress.
