Chinese Tomato Beef Recipe
Ingredients
1 lb. lean beef, cut in thin slices
2 medium onions, cut in large pieces
1 green pepper, cut in large pieces
3 tomatoes, cut in wedges
5 tbs. peanut oil (or salad oil)
1 tbs. soy sauce
2 tsp. flour
1 clove garlic
Directions
Place the meat in a bowl and pour over a sauce made from 2 tbs.peanut oil, soy sauce and flour.
Mix.
Marinate for 20 mins., turning once.
Heat 2 tbs.of the peanut oil in skillet and add garlic.
Press garlic against sides of pan when browned and dry.
Remove garlic and add the meat and marinade.
Cook for 5 to 10 minutes, stirring frequently.
Remove the meat and the gravy that has formed and set aside.
Heat remaining peanut oil in skillet and add onions, green pepper and cook slightly.
Add the meat, gravy and tomatoes.
Heat until the gravy bubbles, remove and serve at once.
Garnish with parsley or watercress.
