Ingredients

 1/3 cup sliced green onion with tops
 Dry sherry2 Tablespoon
 Cornstarch2 Teaspoon
 Ground ginger1/4 Teaspoon
 1 pound beef liver, cut in
 1/4-inch strips
 Cooking oil2 Tablespoon
 Bamboo shoots 6 Ounce, drained
 1 3-ounce can chopped mushrooms, drained
 Soy sauce1 Tablespoon
 Hot cooked rice
 Soy sauce

Directions

Combine onion, sherry, cornstarch, and ginger; toss with liver.
In skillet quickly cook liver in hot oil.
Add bamboo shoots and mushrooms.
Cook, stirring constantly, till heated through.
Stir in 1 tablespoon soy sauce.
Serve over rice.
Pass soy sauce.
