Couscous – 1 cup
 
Cherry tomatoes - 1/2 basket
 
Chickpeas - 1cup, soaked, boiled and drained
 
Cold pressed olive oil - 1 tablespoon
 
Mint - 1/2 a bunch
 
Parsley - 1/2 a bunch
 
Coriander - 1/2 a bunch
 
Lemon - 1/2 whole
 
Lime - 1/2 whole
 
Sugar - 1 teaspoon
 
Turmeric - 1 teaspoon
 
Water - as required
 
Pepper - to taste
 
Chicken stock - as required

Directions

MAKING
1. Put couscous in a bowl and pour boiling water over it.
2. Add chicken stock and turmeric and set aside for 10 minutes.
3. When liquid has been absorbed, separate couscous grains with a folk.
4. Add chick peas, tomatoes, mint, parsley, coriander, lemon, lime, sugar, pepper and cold pressed olive oil.
5. Mix well and serve.

SERVING
6. Serve warm or cold with stew, curry, braised or grilled meats or veggies.
