Chinese Shrimp Kebabs Recipe
Ingredients
16 chunks fresh pineapple
2 lb (900 g) raw shrimp, shelled and deveined
24 fresh snow peas, blanched
1/2 cup (125 ml) rice wine
2 tbsp (30 ml) sesame sauce
1 tbsp (15 ml) oil
1 tsp (5 ml) lime juice
Salt and pepper
Directions
Preheat oven to 400°F (200°C).
Place pineapple, shrimp, pea pods, wine and sesame sauce in bowl; marinate 15 minutes.
Alternate ingredients on skewers and place on ovenproof platter.
Mix oil with lime juice; set aside.
Cook skewers 6 to 8 minutes in oven 6 in (15 cm) from top element.
Baste occasionally with oil mixture and turn skewers over once.
Season to taste.
