Ingredients

 
1 cup (250 ml) mushrooms, finely sliced
 
Juice of 1/2 lemon
 
2 cups (500 ml) cooked rice, cooled
 
2 cups (500 ml) spinach, washed, dried
 
1/3 cup (80 ml) raisins
 
1 cup (250 ml) bean sprouts
 
3 celery stalks, diced
 
1 green bell pepper, diced
 
2 tbsp (30 ml) chopped parsley
 
1/4 cup (60 ml) green onions, chopped
 
1 cup (250 ml) cashews
 
Dressing
 
1/4 cup (60 ml) soy sauce
 
1/2 cup (125 ml) oil
 
1 garlic clove, finely sliced

Directions

–  Sprinkle mushrooms with lemon juice and place in large salad bowl. Add other ingredients and set aside.
–  In a bowl, combine all dressing ingredients. Pour over vegetable salad. Toss. Marinate for 1 hour before serving.
