Chinese Salad Recipe

Ingredients

 
2 tablespoons bean sprouts
 
2 tablespoons shredded pickled carrots (in jars)
 
2 tablespoons shredded pickled cabbage (in jars)
 
1 tablespoon shredded green pepper
 
2 rings canned pineapple
 
1 good-sized firm ripe tomato or 2 small ones
 
1 lettuce heart

Directions

Pick over the beans sprouts then drop them into boiling water for 3-4 minutes.
Drain, pour cold water over them and drain very well again.
Combine the sprouts with the well drained pickled vegetables and the green pepper.
Place them on a serving dish and garnish with the pineapple rings (each halved, slantwise), halved large tomato or whole small ones and halved heart of lettuce.
