Chinese Plum Chicken Recipe
Ingredients
| 3 red plums, rinsed | ||
| Sugar | 2 Tablespoon | |
| Orange juice | 2 Tablespoon | |
| Lemon juice | 1/2 Teaspoon | |
| Salt | 1/2 Teaspoon | |
| Flour | 1 Teaspoon | |
| 1 whole chicken breast, halved | ||
Directions
Preheat oven to 350 degrees.
Slice plums into small bowl.
Mix in sugar, orange juice, lemon juice, salt, and flour.
Spread in center of a square of foil (Use 18-inch heavy-duty foil for this).
Remove skin from chicken and score (make long shallow cuts in a diamond pattern in the flesh).
Place cut side down on plum mixture.
Fold foil to make a secure package.
Place foil package on shallow baking pan (just in case).
Bake until fork tender, about 45 minutes.
Flip the package over and back, once during baking, to distribute the juices.
To serve, spoon plum sauce over chicken.
