Chinese Noodle Salad with Chicken Recipe
Ingredients
| Chicken breast | 4 | |
| Water | 3 Tablespoon | |
| Soy sauce | 2 Tablespoon | |
| Sesame paste | 2 Tablespoon | |
| Dry sherry | 1 1/2 Tablespoon | |
| Red wine vinegar | 2 Teaspoon | |
| Sugar | 1 1/2 Teaspoon | |
| Garlic | 3 Clove (5gm) | |
| Ginger | 1 | |
| Spaghetti | 12 Ounce | |
| OR Chinese noodles -fresh, frozen, or dried | ||
| Sesame oil | 2 Teaspoon | |
| Scallions | 2 | |
| Ground black pepper | 1 To taste | |
Directions
MAKING
1)Use covered pot and boil 3 or 4 quarts of water, if required add salt.
2)In a skillet keep chicken.
3)Pour enough water, wine, or vermouth into skillet.
4) Simmer chicken until tender for about 20 minutes.
5)Mix water, soy sauce, sesame paste, sherry, vinegar, sugar.
6)Put garlic through press and mince ginger and add this to soy mixture.
7)Let the dried noodles be cooked for about 7 minutes or if using fresh, add to pot, and let the water boil, and cook about 30 seconds, until tender.
8)Drain and rinse under cold water and sprinkle with sesame oil.
9)Chop scallions finely.
10)Remove chicken from skillet and skin, using fork and knife as it will be hot.
11)Later shred chicken and mix it with little sauce.
FINALIZING
12) Use the remaining sauce for noodles and top with chicken and sprinkle on scallions.

13)Serve it hot.
