Ingredients

 1/2 C. finely diced cooked ham, chicken or pork
 2 T. good cooking oil
 Mushrooms3 , finely sliced
 Cooked rice1 Quart
 Green onion1 , finely chopped
 Soy sauce2 Tablespoon
 Egg1 , Well beaten

Directions

Brown meat lightly in oil.
Add mushrooms, rice, onion and soy sauce.
Continue to fry over low heat for 10 minutes.
Then add beaten egg and continue to fry and stir for another 5 minutes.
If color isn't dark enough, add more soy sauce.
Makes 6 servings.
