Ingredients

 250 g/8 oz long-grain rice, soaked in cold water for 30 minutes and drained
 500 ml/16 fl oz water
 Salt To Taste
 Vegetable oil2 Tablespoon
 Onions2 Medium, finely chopped
 250 g/8 oz cooked ham, finely chopped
 2 Tbsp peas or petits pois, cooked
 Tomatoes2 Medium, quartered
 Shrimps250 Gram, deveined
 Soy sauce1 Tablespoon
 1 egg, lightly beaten

Directions

Put the rice, water and 1 teaspoon salt in a saucepan and bring to the boil.
Cover and simmer for 15 minutes, or until all the water has been absorbed.
Remove from the heat.
Heat the oil in another saucepan.
Add the onions and cook, stirring, for 2 minutes.
Add the ham, peas, tomatoes, shrimps and salt to taste and cook, stirring, for 1 minute.
Stir in the rice and cook, stirring, for 2 minutes.
Add the soy sauce and egg and cook, stirring, for a further 2 minutes.
Transfer the fried rice mixture to a warmed serving bowl and serve immediately or keep warm until required.
