Chinese Fried Rice With Green Peas Recipe
Ingredients
| 250 g/8 oz long-grain rice, soaked in cold water for 30 minutes and drained | ||
| 500 ml/16 fl oz water | ||
| Salt | To Taste | |
| Vegetable oil | 2 Tablespoon | |
| Onions | 2 Medium, finely chopped | |
| 250 g/8 oz cooked ham, finely chopped | ||
| 2 Tbsp peas or petits pois, cooked | ||
| Tomatoes | 2 Medium, quartered | |
| Shrimps | 250 Gram, deveined | |
| Soy sauce | 1 Tablespoon | |
| 1 egg, lightly beaten | ||
Directions
Put the rice, water and 1 teaspoon salt in a saucepan and bring to the boil.
Cover and simmer for 15 minutes, or until all the water has been absorbed.
Remove from the heat.
Heat the oil in another saucepan.
Add the onions and cook, stirring, for 2 minutes.
Add the ham, peas, tomatoes, shrimps and salt to taste and cook, stirring, for 1 minute.
Stir in the rice and cook, stirring, for 2 minutes.
Add the soy sauce and egg and cook, stirring, for a further 2 minutes.
Transfer the fried rice mixture to a warmed serving bowl and serve immediately or keep warm until required.
