Chinese Cucumber Soup Recipe
Ingredients
4 cups Basic Oriental Stock
2 cups diced, peeled cucumbers
3 shiitake mushrooms, rinsed and slivered
1/2 cup shredded bamboo shoots
1/2 cup shredded spinach
1/2 cup chopped raw shrimp
1 clove garlic
1 1/4-inch slice ginger
1 teaspoon tamari or soy sauce
Directions
In a large saucepan, combine all ingredients.
Simmer gently for 20 minutes.
Remove garlic and ginger.
