Chinese Chicken With Cashews Recipe
Ingredients
| Oil | 3 Tablespoon | |
| 2 chicken breasts, boned, skinned, and cut into 3/4 inch cubes (1 to 1 1/4 lbs.) | ||
| Garlic | 2 Clove (5gm), finely chopped | |
| Soy sauce | 2 Tablespoon | |
| Sherry | 1 Tablespoon | |
| Cornstarch | 1 Tablespoon | |
| Ground ginger | 1 Teaspoon | |
| Salt | 1/4 Teaspoon | |
| 1 green pepper, cut in 3/4 inch cubes | ||
| Cashews | 2/3 Cup (16 tbs), halved | |
Directions
1. Pour oil into a 13" x 9" x 2" oblong baking dish and microwave, uncovered, at Time Cook (power level 10) for 3 minutes.
2. While the oil is heating, combine all remaining ingredients, except green pepper and cashews. Add chicken mixture to oil and microwave, uncovered, at Time Cook (power level 10) for 3 minutes, stirring twice.
3. Add green pepper and cashews. Cover. Microwave at Time Cook (power level 10) for 3 to 4 minutes, or until green pepper and chicken are cooked, stirring twice. Let stand, covered, 2 to 3 minutes before serving.
