Original Chinese Chicken Stock Recipe
Ingredients
| 1 uncooked chicken carcass, or 8 chicken wings | ||
| Pork spare ribs | 350 Gram | |
| Onion skins or spring onion trimmings | ||
| Carrot skins | ||
| Root ginger | 12.5 Gram | |
| Dry white wine | 150 Milliliter | |
| Light soy sauce | 2 Tablespoon | |
| Salt | To Taste | |
| Pepper | To Taste | |
Directions
1. Place all the ingredients in a large pan, add 2.5 litres (4 pints) water, cover and simmer for 1 hour. Strain and cool the stock, then chill.
