Chinese Chicken Salad Recipe

Whenever I have chinese friends visiting, I always prepare chinese chicken salad which is the most savored dish of their cuisine. Just try this chinese chicken salad recipe, and you will never want to go for another recipe again.
Ingredients
5 chicken breasts
1 head lettuce, chopped
1/4 cup almonds, chopped
4 oz. Chinese rice sticks or chow mein noodles
4 stalks celery, chopped
6 green onions, chopped
2 Tbsp. sesame seed
Dressing:
4 Tbsp. red wine vinegar
2 tsp. salt
1/4 cup oil
3 Tbsp. sugar
1 tsp. white pepper
Directions
Boil chicken; remove skins and shred.
Add celery, lettuce and onions.
Over low heat, toast almonds and sesame seed.
Stir constantly to keep them from burning.
Mix all ingredients together, except the noodles.
You can make the day before and add noodles before serving and put on dressing.
If using rice noodles: In large pan, put 3 tablespoons oil and heat.
When oil is hot, put noodles (divide into about 3 squares).
They will crackle and then expand rapidly.
Turn over and cook other side.
Drain on paper towel.
Dressing: Mix all ingredients together and bring to a boil; stir until well mixed.
Cool thoroughly before placing on salad.
