 Cooked chicken breast1 1/2 Cup (16 tbs)

 Water chestnuts1 Can (10oz), drained
 Mushrooms1/2 Cup (16 tbs), sliced
 Green onions1/4 Cup (16 tbs), sliced
 Red bell pepper1/4 Cup (16 tbs), chopped
 Black olives1/4 Cup (16 tbs), sliced
 Vegetable oil2 Tablespoon
 Lemon juice2 Tablespoon
 Soy sauce1 Tablespoon
 Ground ginger1/2 Teaspoon
 Ground white pepper1/2 Teaspoon
 Lettuce leaves

Directions

Combine rice, chicken, celery, water chestnuts, mushrooms, onions, bell pepper, and olives in large bowl.
Place oil, lemon juice, soy sauce, ginger, and white pepper in small jar with lid; shake well.
Pour over rice mixture.
Toss lightly.
