Ingredients

 2 small Chinese cabbages, shredded
 450 g / 1 lb bean sprouts
 Watercress2 Bunch (100gm)
 Apple1 , sliced
 Avocados2
 150 ml / 1/4 pint olive oil
 Wine vinegar4 Tablespoon (FOR THE DRESSING)
 Sugar1 Teaspoon (FOR THE DRESSING)
 French mustard1 Teaspoon (FOR THE DRESSING)
 Chopped parsley2 Tablespoon, mixed (FOR THE DRESSING)

Directions

Place the cabbage and bean sprouts in a salad bowl.
Separate the watercress into sprigs; add to the bowl with the apple slices.
Place the dressing ingredients in a screw-topped jar and shake well.
Peel the avocados and slice them into another bowl.
Pour over the dressing to coat.
Add to the remaining salad and toss well before serving.
