Directions

Cut meat into thin slices or strips.
Mix with 2 tablespoons of the soy sauce, the sherry and salt and leave to marinate for 30 minutes.
Peel and chop the onions.
Remove the meat from the marinade and toss in the flour.
Heat the oil in a frying pan and fry the onions and meat for 4 minutes.
Add the marinade, the remaining soy sauce, the garlic, pepper, drained bean sprouts and sugar.
Mix together and cook for a further 3-4 minutes.
Thicken with the cornstarch, dissolved in 1 tablespoon water, check the seasoning and serve.
