For the potato filling

For the black bean filling

For assembling tortilla chips

Things You Will Need

To prepare the potato filling:
1. In a bowl of cooked potatoes (cooked with salt, pepper and cumin powder), add some finely chopped green onions, red, yellow, green bell peppers, onions and tomatoes. Mix well.
To prepare the black bean filling:
2. Take a bowl, add the black beans, corn, green onion, oregano, cumin powder, garlic powder, paprika, bell peppers, onions, tomatoes and salt to taste. Mix well to combine all the ingredients.
For the assembling of the chimichanga:
3. Take each tortilla, spread refried beans, Mexican rice and then top it with any of the filling prepared earlier; either the potato filling or the black beans filling.
4. Sprinkle some cheese and chopped bell peppers and onions and fold the tortillas and seal it with tooth picks.
5. The chimichangas can be either baked or fried.
6. To bake the chimichangas, spray them with butter spray and line them on a baking sheet and bake in a preheated oven at 350 F. Flip sides after 8 to 10 minutes when one side is golden brown.

7. The baked chimichangas can be arranged over a layer of lettuce leaves, topped with shredded cheese and olives. Some enchilada sauce can be poured over the top if desired.

8. Serve the chimichangas with sour cream, guacamole and salsa.

you can also use the prepared fillings on tortilla chips and serve them with salsa and guacamole.
