Chilli Paratha Recipe

Chilly paratha is a quick and yummy little recipe to turn the dull and boring looking cold chapatis into an interesting filling meal. It is essentially a plain paratha shredded into small, bite-sized pieces mixed with sauteed onions, tomatoes, and chili powder. It is usually garnished with coriander leaves or green onions. Often, this scrumptious dish is served at restaurants with a side of raitha, or a mix of salty yogurt and cold vegetables.

Recipe Story

Although the origin of the chili paratha is the stuff of legends and has long been debated among food critics, many agree that its roots are in Madurai, a city 180 miles south of Chennai. The Arya Bhavan in Madurai is arguably the first known restaurant to have served this dish. The story goes that one of the chefs in the restaurant accidentally overestimated and made too much paratha. In a quandary as to what to do with the extra food, he had a brainwave and made this recipe. Now the chili paratha has become a staple food and is ubiquitous at restaurants across Southern India, including Modern Restaurant in Madurai, and Sangeetha in Chennai, India.

Ingredients

 
Parathas : 6
 
Onions : 1
 
Tomatoes : 2 (Finely chopped)
 
Green Bell Pepper (Capsicum) : 1 cut into cubes
 
Cumin Seeds : 1 tsp
 
Curry leaves : 3
 
Green Chilies : 3 (Slit Lengthwise)
 
Red Chili Powder :1 tbsp (or) chili sauce
 
Turmeric powder : 1/4 tsp
 
Ginger and garlic paste : 1 tbsp
 
Salt : according to your taste
 
Garam Masala : 1 tsp
 
Lemon juice : 1 tsp
 
Soy sauce : 2 tsp (optional)

Directions

In a pan heat oil add cumin seeds. When it sputters add onions, when turned into golden brown add green chilies, ginger & garlic paste, saute for 3 minutes.
Now add Tomatoes, curry leaves and salt cook well for 5 minutes add all the masalas (garam masala, red chili powder (or chili sauce) , turmeric powder). Fry them for 3 minutes.
Add the bell pepper mix it well with the masalas fry them little bit.
Now cook the parathas and cut them or tear them into pieces or cubes.
Add this parathas in to the above mixture and mix it well.
Cook till the masalas and parathas are mixed together, now add soy sauce mix it well and remove from heat.
Squeeze lime juice on top of it and serve hot.
Garnish it with green onions or coriander leaves.

This recipe s good. Instead of sauting tomatoes and all masalas u can grind nicely a mixture of the following items as given below: tomatoes 3-4in nos,dry red chillies/ red chilli powder, garam masala, saunf, some cashews,a little of black peppers(optional). u can use this mixture in place of chopped tomatoes nd masalas. I assure u... It tastes better:-)
