Ingredients

 
2 cups water
 
2 ounces unsalted, sliced sun-dried tomatoes (dry-packed)
 
2 cups tomato juice, divided
 
1/2 medium onion, chopped
 
1 small clove garlic, minced
 
1 teaspoon sugar
 
1 teaspoon dried whole dillweed
 
1/4 teaspoon pepper
 
1/2 cup skim milk

Directions

Bring 2 cups water to a boil in a small sauce pan; add sun-dried tomatoes.
Cover; reduce heat, and simmer 4 minutes.
Drain.
Cover tomatoes with cool water, and soak for 5 minutes, drain thoroughly.
Place tomatoes, 1 cup tomato juice, onion, garlic, sugar, dillweed, and pepper in container of an electric blender; process until smooth add remaining 1 cup tomato juice and milk; process until blended.
Chill thoroughly.
