Ingredients

 
Artichokes - 6 Ige.
 
Lemon juice
 
Garlic - 1 clove
 
Mashed Paprika
 
Salt - 1 tsp.
 
Mayonnaise - 1 c.

Directions

MAKING
1) Wash artichokes thoroughly and drain well.
2) Slice off the tip one-third down.
3) Remove the stem and the small leaves from around the base.
4) Cut the thorns from the tips of the outer leaves.
5) Rub lemon juice on the cut edges.
6) Slightly separate the leaves and scoop out fibrous center leaves and fuzzy core.
7) Stand the artichokes in 1-inch boiling salted water.
8) Place a lid over and allow to simmer for 30 minutes, till tender.
9) Drain and refrigerate with a lid for 1 hour or longer.
10) Blend in the mayonnaise and garlic.

SERVING
11) Spoon into the artichokes and sprinkle with paprika.
