Chilled Wine Poached Steaks Recipe
Ingredients
| Water | 1 1/2 Cup (16 tbs) | |
| Dry white wine | 1/2 Cup (16 tbs) | |
| Green onion | 1 Small, sliced | |
| Bay Leaf | 1 | |
| 4 cod, halibut, salmon, or shark steaks, cut 1 to 1 1/4 inches thick | ||
| Sorrel Sauce or Avocado Sauce | ||
Directions
In a large skillet combine water, wine, green onion, and bay leaf.
Bring just to boiling.
Carefully add fish.
Return just to boiling, and then reduce heat.
Cover and simmer gently for 8 to 15 minutes or till fish is done.
Remove fish from water.
Pat the fish dry with paper towels.
Cover and chill for up to 2 days.
To serve, spoon sauce over poached fish.
Sorrel Sauce: In a small mixing bowl stir together 1/4 cup plain yogurt,1/4 cup mayonnaise or salad dressing, 1/4 cup finely chopped sorrel or spinach, 1 sliced green onion, 1/2 teaspoon prepared horseradish, and dash white pepper.
If desired, cover and chill for up to 4 hours.
