Chilled Pea Soup Recipe
Ingredients
| 2 cups shelled peas or 110-ounce package frozen peas | ||
| Lettuce | 2 Cup(16 tbs), shredded | |
| Chicken broth | 1 13 3/4 Ounce, can | |
| Water | 1/3 Cup(16 tbs) | |
| Tomato juice | 1/4 Cup(16 tbs) | |
| Green onion | 1/4 Cup(16 tbs), finley chopped | |
| Snipped parsley | 1 Tablespoon | |
| Salt | 1/2 Teaspoon | |
| Pepper white | 1/4 Teaspoon | |
| Dried thyme | 1/4 Teaspoon, crushed | |
| Whipping cream | 1/2 Cup(16 tbs) | |
Directions
In 2-quart saucepan combine peas, lettuce, chicken broth, water, tomato juice, onion, parsley, salt, white pepper, and thyme.
Bring to boiling.
Reduce heat; cover and simmer 20 minutes.
Turn into blender container; cover and blend till smooth.
Cool slightly; stir in whipping cream.
Cover and chill.
If desired, garnish with sour cream and fresh mint.
