Ingredients
Leeks - 1 lb, white part only
Potatoes - 1 lb
Chicken stock - 5 1/4-5 1/2 cups
Light cream - 1 cup
Chives - 1/4 cup, chopped
Salt
Freshly ground white pepper
Directions
GETTING READY
1 Cut the potatoes into small pieces.
2 Cut the white part of the leeks into very thin rings.
MAKING
3 In a saucepan, place both the leeks and potatoes with the stock.
4 Bring slowly to a boil.
5 Cover, and simmer for about 50 minutes or until the vegetables are very tender.
6 Using a hand held electric beater, beat until smooth or put through a blender.
7 Stir in the cream and add salt and pepper to taste.
8 Allow to cool.
9 When cool, chill in the refrigerator.
SERVING
10 Serve very cold, garnishing the individual servings with the chopped chives.
