With a sharp knife, cut through the skin to remove the white membrane along with the peel.
Section the grape fruit by cutting down to the core on either side of the inner membranes to free the segments, then dig out the seeds with the point of the knife.
Put the segments in another bowl.
Squeeze the rinds and membranes over the bowl of juice and discard them.
Stir the creme de menthe and chopped mint into the juice and pour over the grapefruit segments.
Cover tightly with plastic wrap and refrigerate.
