 Apples2

 1 cannedpimiento, sliced
 Sour cream2/3 Cup (16 tbs)
 Plain yogurt2/3 Cup (16 tbs)
 Juice of 1/2 lemon
 Salt1/4 Teaspoon
 Pepper1 Pinch
 Onion rings

Directions

Soak the herrings in cold water for 1 hour.
Drain and cut into strips.
Peel and core the apples and slice thinly.
Peel the onions and grate finely.
Mix the herrings, apple slices, onions and pimiento together.
Mix together the sour cream, yogurt, lemon juice and salt and pepper.
Arrange the fish salad in a serving bowl and chill in the refrigerator for 20 minutes.
Spoon over the sauce and serve garnished with onion rings.
