Ingredients

 Vegetable oil1 Tablespoon
 Onion1/4 Cup(16 tbs), chopped
 Celery1/4 Cup(16 tbs)
 Garlic1/4 Teaspoon, minced
 3 apples, peeled, cored and diced
 Curry powder1 Teaspoon
 Turmeric1/4 Teaspoon
 Chicken stock8 Cup(16 tbs)
 Cilantro1 Teaspoon, chopped
 Whipping cream1/4 Cup(16 tbs)
 Apple1 Cup(16 tbs), chopped

Directions

Heat olive oil in medium saucepan; add onion, celery and garlic.
Cook until softened.
Add apples; cook until fork tender.
Stir in curry powder and turmeric.
Add chicken stock.
Bring mixture to a boil.
Reduce heat to low; simmer until reduced by half.
Add cilantro; cool.
Puree in blender or food processor; strain.
Stir in cream; season with salt and pepper.
Chill several hours.
Garnish each serving with chopped apple.
