Chilled Curried Apple Soup Recipe
Ingredients
| Vegetable oil | 1 Tablespoon | |
| Onion | 1/4 Cup(16 tbs), chopped | |
| Celery | 1/4 Cup(16 tbs) | |
| Garlic | 1/4 Teaspoon, minced | |
| 3 apples, peeled, cored and diced | ||
| Curry powder | 1 Teaspoon | |
| Turmeric | 1/4 Teaspoon | |
| Chicken stock | 8 Cup(16 tbs) | |
| Cilantro | 1 Teaspoon, chopped | |
| Whipping cream | 1/4 Cup(16 tbs) | |
| Apple | 1 Cup(16 tbs), chopped | |
Directions
Heat olive oil in medium saucepan; add onion, celery and garlic.
Cook until softened.
Add apples; cook until fork tender.
Stir in curry powder and turmeric.
Add chicken stock.
Bring mixture to a boil.
Reduce heat to low; simmer until reduced by half.
Add cilantro; cool.
Puree in blender or food processor; strain.
Stir in cream; season with salt and pepper.
Chill several hours.
Garnish each serving with chopped apple.
