Chilled Cucumber Soup With Chicken Stock Recipe
Ingredients
| Coriander | 1 Bunch (100gm) | |
| 2 onions, roughly chopped | ||
| Sauce | 4 Drop | |
| 4 cucumbers, peeled, seeded and sliced | ||
| Salt | To Taste | |
| 600ml natural low fat yogurt | ||
| black pepper | 1 | |
| Chicken stock | 500 Milliliter, skimmed | |
| Curry powder | 1 Teaspoon | |
| 75ml natural low fat yogurt and coriander leaves for garnish | ||
Directions
Wash coriander thoroughly.
Chop leaves and stalks in a food processor.
Add onions and cucumbers, process until finely chopped.
In a large bowl combine yogurt with curry powder and sauce, season to taste with salt and freshly ground pepper.
Whisk chicken stock and cucumber mixture into yogurt.
Cover and refrigerate for at least 2 hours.
Chop leaves and stalks in a food processor.
Add onions and cucumbers, process until finely chopped.
In a large bowl combine yogurt with curry powder and sauce, season to taste with salt and freshly ground pepper.
