Chilled Beet Soup Recipe
Ingredients
| Beets - 1 number, 16-ounce can, diced | ||
| Onion - 1 number, slice | ||
| Chicken broth | 1 1/2 Cup (16 tbs) | |
| Lemon juice | 1 Tablespoon | |
| Sugar | 1 Teaspoon | |
| Salt | 1/2 Teaspoon | |
| Pepper | 1/4 Teaspoon | |
| Ground cloves -€“ few dashes | ||
| Lemon slices for garnishing | ||
Directions
MAKING
1. In a blender, blend together the un-drained beets and onion slice to form a smooth mixture.
2. In a bowl combine together the beet mixture, chicken broth, lemon juice, sugar, salt, pepper, and ground cloves; mix well.
3. Cover and chill thoroughly before serving.
SERVING
4. Serve the soup in chilled bowls; top each serving with lemon slices and green onion.
