Chilled Asparagus Soup Recipe
Ingredients
| 3/4 pound asparagus, cut up, or 1 8-ounce package frozen cut asparagus | ||
| 1 thin slice onion | ||
| Boiling water | 1/2 Cup (16 tbs) | |
| Milk | 1 Cup (16 tbs) | |
| Light cream | 1/2 Cup (16 tbs) | |
| Salt | 1/2 Teaspoon | |
| Pepper | 1 Dash | |
Directions
In covered pan cook fresh or frozen asparagus and the onion, slice in the boiling water till crisp-tender; do not drain.
Cool slightly.
In blender container combine the undrained asparagus and onion, milk, light cream, salt, and pepper.
Cover and blend until smooth, 15 to 20 seconds.
Chill for 3 to 4 hours (chill in blender container, if desired).
Stir or blend before serving.
