Tomatoes - 1 can, dried
Chillies - 1 cup, peeled and chopped
Monterey Jack Cheese - 2 cups
Yoghurt - 1 cup
Butter - 1/4 cup
Large onions – 2, finely chopped
Directions
MAKING
1. In a pan, melt butter.
2. Add onions and let it brown.
3. Add yoghurt and cook it on a very low flame.
4. Add dry tomatoes and chopped chillies.
5. Cook till it becomes a thick consistency, stirring constantly.
6. Keep it aside to cool.
SERVING
7. To serve chile con queso sauce, top it with cheese. This sauce can be served either hot or cold on tortillas, pumpernickel or whole wheat crackers.
