Ingredients

 
2 large poblano peppers
 
1/2 cup cheese
 
1 diced tomato
 
4 eggs
 
salt
 
pepper

Directions

Roast off the chillies and chop them put them on the bottom of the buttered ramekins. Top with a bit of tomato, then cheese - crack the eggs on top then cover with some more cheese... Bake at 400 for 10-15 minutes. Eat and enjoy
