Chili-Tofu Casserole Recipe

My love for Chili-tofu Casserole developed during high school days. This Chili-tofu Casserole, when served as a Side Dish will always bring cheer to your table. Please try this recipe and leave a comment for me here or on Twitter.

Ingredients

 
1 can (8 ounces) tomato sauce
 
1 medium onion, chopped (about 1/2 cup)
 
1 large clove garlic, crushed 1/2 teaspoon salt
 
1/2 teaspoon dried oregano leaves
 
1/4 teaspoon ground cumin
 
2 pounds firm tofu, cut into 1/2-inch slices
 
1 can (4 ounces) whole green chilies
 
1 cup shredded Cheddar cheese (about 4 ounces)

Directions

Mix tomato sauce, onion, garlic, salt, oregano and cumin.
Spread half of the tomato mixture in greased baking dish, 8x8x2 inches.
Arrange tofu on tomato sauce, overlapping slices.
Split and flatten chilies; remove seeds and membranes.
Arrange chilies on tofu; spread with remaining tomato mixture.
Sprinkle with cheese.
Cook uncovered in 350° oven until sauce is hot, about 15 minutes.
