Ingredients

 4 large green pepperss seeded
 Onions5 Medium
 Celery stalks8 Small
 Canned tomatoes10 Cup (16 tbs), drained
 Brown sugar2 Cup (16 tbs)
 Vinegar2 Cup (16 tbs)
 Salt3 Tablespoon
 Cinnamon stick12 inch
 Whole Cloves1 Tablespoon
 Bay leaves2
 Allspice1 Tablespoon
 3 dried chili peppers

Directions

Wash peppers, onions, and celery and put through coarse food chopper.
In-large kettle combine with tomatoes, sugar, vinegar, and salt.
Tie spices together in a bag and add to mixture.
Simmer for 2 hours until thick, stirring occasionally.
When desired consistency, remove spice bag, pour into hot sterilized jars and seal immediately.
