Chili Relleno Supreme Recipe

Ingredients

 
6 Slices Jack Cheese, sliced 1/2 inch square by 3 inches long
 
5 Eggs, separated
 
1 Tsp. Flour
 
Pinch Salt
 
1 Pt. Cooking Oil
 
2 Small Cans Whole Ortega Brand Chilies

Directions

Take each chili and roll both sides in flour and wrap around cheese slice.
After you have prepared all of the chilies, beat whites of eggs with mixer until very stiff, adding a pinch of salt and tsp.of flour while beating.
Then fold in yolks of eggs slowly until batter is well mixed.
Have oil in skillet very hot.
Place dollop of batter in hot oil, lay cheese filled chili on top and then cover with more batter until the entire chili is covered.
After one to two minutes when batter has browned, flip chili over to cook the other side.
Remove and serve.
Warmed La Victoria Bottled Salsa Suprema may be poured over relleno if desired.
