Chili Muffins Recipe

Chili muffins, baked with salsa, chili powder and ground beef are perfect for those who love the heat of chili. These spicy little muffins can be served along with a bowl of stew for lunch. Go ahead and spice things up with these fiery little bakes!

Ingredients

 
1 lb lean ground beef 500 g
 
3/4 cup salsa (medium) 175 mL
 
1 tsp chili powder 5 mL
 
1/2 tsp salt 2 mL
 
1/4 Isp pepper 1 mL
 
1 can(14oz[398mL]) 1 red kidney beans, rinsed and drained
 
1/2 cup shredded Cheddar cheese 125 mL (or Monterey Jack, etc.)

Directions

In a large bowl, break up the beef with a fork.
Mix in 1/4 cup (50 mL) of the salsa, chili powder, salt and pepper.
Divide evenly into 8 muffin cups.
Press into the center of each to form a well and press into the bottom and up sides of each cup.
Bake in preheated oven for 10 minutes or until the meat is no longer pink.
In another bowl, combine beans and remaining salsa.
Spoon into the muffin cups.
Sprinkle with cheese.
Bake for 7 or 8 minutes or until the beans are hot and the cheese is melted.
HINT: Make mini meat loaves by patting meat mixture into muffin pan cups.
Brush each generously with barbecue sauce and bake.
