Chili in Potato Shell Recipe
Ingredients
1 egg,slightly beaten
4 cups seasoned mashed potatoes,fresh,not instant
1/4 cup crushed cornflakes
2 onions,chopped
1-2 cloves garlic,chopped (optional)
2 tablespoons fat 1 pound hamburger
1 cup canned tomatoes or 1/2 cup tomato juice
1 tablespoon flour
1 tablespoon chili powder
1 (15-ounce) can red kidney beans, Dash salt,sugar,Worcestershire sauce, herbs or cayenne
Directions
Stir about 1/2 the egg into potatoes, and mold mixture into nest shape in greased deep pie dish (for free-standing nest, use greased removable bottom of round cake tin).
Brush surface with remaining egg, and sprinkle with flakes.
Bake 15 20 minutes at 375°F.
Meanwhile saute onions and garlic in fat until tender.
Add hamburger and fry, stirring, until meat is brown all through.
Stir in tomatoes, flour and chili powder.
Boil 5 minutes.
Add beans, stir and continue cooking 5 minutes longer.
Taste, and flavor.
Pour chili into hot potato shell, and keep hot until serving.
Cut in wedges.
