Chili Con Carne Recipe
Ingredients
2 tablespoons bacon dripping or butter
1 onion, finely chopped
2 cloves garlic, finely chopped
750g stewing beef, minced or diced
1 x 425g can tomatoes
1/2 bay leaf
1 tablespoon Mexican-style chili powder
Salt
Pinch brown sugar
2x310g cans kidney beans, drained
Directions
Melt fat in a large, heavy saucepan and cook onion and garlic gently until golden. Add beef and brown lightly. Chop tomatoes and add with their juice, the bay leaf, chili powder, salt and brown sugar. Stir, cover tightly and simmer very gently for about 1 hour. Add drained kidney beans and cook a further 15 minutes. Discard bay leaf. Serve with corn bread or corn muffins
