Chili Chip Casserole Recipe
Ingredients
1 lb. ground beef
1 c frozen chopped onion
1 envelope chili seasoning mix
1 can (6 oz.) tomato paste
3/4 c water
1 bag (6 oz.) corn chips
1 can (1 lb.) pinto or kidney beans
1 can (4 1/2 oz.) sliced or chopped ripe olives
2 c grated Cheddar cheese (1/2 lb.)
Directions
Brown the beef, add onion, chili mix, tomato paste, and water.
Simmer 10 minutes.
Sprinkle 2 C (1/2 bag) corn chips in bottom of 21/2 -qt casserole.
Spoon half the meat mixture over it, followed by a layer of half the beans, half the olives, and 1 C cheese.
Repeat all layers except corn chips.
Sprinkle remaining corn chips over all.
Cover and bake for 30 minutes at 350° F.
Remove cover and bake an additional 15 minutes.
