Ingredients

 
2 lb ground beef/buffalo (chilli ground)
 
1 ½ - 2 cups grated yellow onions
 
2 cups of beef stock
 
8 ounces of tomato stock
 
½ tsp cayenne pepper
 
Chilli powder – dark and light
 
½ tbsp cumin
 
Paprika
 
1 tbsp garlic powder
 
1 tsp better than bouillon chicken base
 
½ tsp salt
 
½ tsp pepper

Directions

Take a pan and add the beef and grates onion. Combine and sauté till meat is lightly brown. Add 8 oz of tomato sauce and beef stock. Mix well. Bring to a boil and simmer for 30 minutes. Add 1 tbsp light chilli powder, 2 tbsp dark chilli powder, cumin, cayenne pepper, garlic powder, salt, pepper and chicken base. Simmer for an hour. Stir occasionally. Add little water, if required.
Again add 1 tbsp light chilli powder, 1 tbsp dark chilli powder, 1 tsp paprika, ½ tsp cumin and stir. Combine and let simmer for 30 minutes with the lid on. Add water if required. Top it with grated cheese and serve with French fries.

Hi curt most people would answer your question saying the darker the powder the hotter the chilli. However, that is not always true. The reason for different shades of chilli powder is simply because they come from a different type of chilli.
