Chili With Bacon Recipe
Ingredients
| 1 pound dried pinto or red kidney beans | ||
| Water | 2 Quart | |
| Bacon ends | 1/2 pound | |
| Salt | 3 Teaspoon | |
| Garlic | 1 Clove (5gm) | |
| Chili powder | 2 Tablespoon | |
| Ground cumin | 1 Teaspoon | |
| Canned tomato paste | 1 Tablespoon | |
Directions
Cover beans with water and let stand overnight; do not drain.
Next day, add bacon, bring to boil and simmer, covered, about 2 hours.
Add remaining ingredients and simmer, covered, stirring occasionally, 2 hours longer, or until beans are tender and liquid is reduced to a gravylike consistency.
Serve in bowls.
Makes 6 servings.
NOTE: Beans can be cooked without soaking, if preferred, but time will be 2 hours or more longer.
Other dried beans can also be used.
