Chili In Tortilla Cups Recipe
Chili in tortilla cups is a beef and beans chili recipe. Cooked with lettuce and tomato, the chili is served in the prepared tortilla cups with green pepper and cheese as garnish.
Ingredients
Tortilla Cups
3/4 pound lean ground beef
1/2 cup chopped onion
1 tablespoon chili powder
1 teaspoon ground cumin
1 1/2 cups Vegetable Juice
1 can (16 ounces) kidney beans, drained
Dash hot pepper sauce
1 cup shredded Colby or Monterey Jack cheese (4 ounces)
1/2 cup diced green pepper
3/4 cup diced Tomato
2 1/2 cups shredded iceberg lettuce
Chopped green pepper for garnish
Chopped Tomato for garnish
Shredded cheese for garnish
Directions
1. Prepare Tortilla Cups.
2. In 10-inch nonstick skillet over medium-high heat, cook beef, onion, chili powder and cumin until beef is browned and onion is tender, stirring to separate meat. Spoon off fat.
3. Stir in juice, kidney beans and hot pepper sauce. Heat to boiling Reduce heat to low; simmer, uncovered, 15 minutes, stirring occasionally.
4. In large bowl, toss cheese, green pepper and tomato with meat mixture.
5. To serve: Divide lettuce among Tortilla Cups. Fill each with about 3/4 cup meat mixture. Garnish with additional green pepper, tomato and cheese.
