 Chili dressing (directions follow)
 2 cups cold cooked beef, cut in matchstick size pieces
 Shredded cabbage3 Cup (16 tbs)
 1 medium-size green pepper, cut in short thin slivers
 Tomatoes2 Small, diced
 Red onion1 Small, separated into rings
 Whole kernel corn1 Can (10oz), drained
 Coriander/ cilantro1/4 Cup (16 tbs), chopped
 2 hard-cooked eggs, cut in wedges

Directions

Prepare chili dressing and combine with beef; cover and refrigerate for 30 minutes to 1 hour.
Add cabbage, pepper, tomatoes, onion, corn, and chopped coriander to meat mixture; toss together to mix.
Garnish with eggs and coriander sprigs, if desired.
