Chili Flavored Beef & Corn Salad Recipe
Ingredients
| Chili dressing (directions follow) | ||
| 2 cups cold cooked beef, cut in matchstick size pieces | ||
| Shredded cabbage | 3 Cup (16 tbs) | |
| 1 medium-size green pepper, cut in short thin slivers | ||
| Tomatoes | 2 Small, diced | |
| Red onion | 1 Small, separated into rings | |
| Whole kernel corn | 1 Can (10oz), drained | |
| Coriander/ cilantro | 1/4 Cup (16 tbs), chopped | |
| 2 hard-cooked eggs, cut in wedges | ||
Directions
Prepare chili dressing and combine with beef; cover and refrigerate for 30 minutes to 1 hour.
Add cabbage, pepper, tomatoes, onion, corn, and chopped coriander to meat mixture; toss together to mix.
Garnish with eggs and coriander sprigs, if desired.
