Chili Corn Relish Recipe

Ingredients
1 16-ounce bottle cider vinegar
1 1/4 cups packed light-brown sugar
1/2 cup water
2 tablespoons all-purpose flour
1 tablespoon salt
1 tablespoon dry mustard
1 teaspoon chili powder
1 medium-sized onion, diced
4 10-ounce packages frozen whole-kernel corn
1 4-ounce jar pimentos, drained and sliced
1 4-ounce can chopped green chilies, drained
Directions
1. In 5-quart saucepot or Dutch oven, stir first 8 ingredients until mixed; over high heat, heat to boiling. Reduce heat to low; cover and simmer 10 minutes, stirring occasionally.
2. Stir in frozen corn; over high heat, heat to boiling. Reduce heat to low; cover and simmer 5 minutes, stirring occasionally, until corn is tender. Remove saucepot from heat; stir in pimentos and green chilies.
3. Spoon relish into large bowl; cover and refrigerate at least 3 hours.
