 Onions1 Cup (16 tbs), chopped
 Shortening1 Tablespoon
 1 1/2 cups tomatoes, chopped and well-drained
 Green chilies1 Can (10oz)
 Salt1 Teaspoon
 Pepper1/2 Teaspoon
 Velveeta cheese1 pound, grated
 Toasted tortilla chips

Directions

Saute onions in shortening until tender.
Add tomatoes, chilies, salt, pepper and cheese.
Cook in double boiler slowly for 30-40 minutes.
Add liquid from chilies if mixture becomes too stiff.
