Mexican Chili Con Queso Recipe
Ingredients
| Onions | 1 Cup (16 tbs), chopped | |
| Shortening | 1 Tablespoon | |
| 1 1/2 cups tomatoes, chopped and well-drained | ||
| Green chilies | 1 Can (10oz) | |
| Salt | 1 Teaspoon | |
| Pepper | 1/2 Teaspoon | |
| Velveeta cheese | 1 pound, grated | |
| Toasted tortilla chips | ||
Directions
Saute onions in shortening until tender.
Add tomatoes, chilies, salt, pepper and cheese.
Cook in double boiler slowly for 30-40 minutes.
Add liquid from chilies if mixture becomes too stiff.
