 All purpose flour3/4 Cup (16 tbs)
 Baking powder1 1/2 Teaspoon
 Eggs9 Small
 Shredded monterey jack cheese4 Cup (16 tbs)
 Cottage cheese2 Cup (16 tbs)
 Diced green chilies2 Can (10oz), drained
 Sugar1 1/2 Teaspoon
 Salt1/4 Teaspoon
 Hot pepper sauce1/8 Teaspoon
 Salsa1 Cup (16 tbs)

Directions

COMBINE flour and baking powder in small bowl.
WHISK eggs in large bowl until blended; add Monterey Jack cheese, cottage cheese, chilies, sugar, salt and hot pepper sauce.
Add flour mixture; stir just until combined.
Pour into prepared dish.
BAKE, uncovered, 45 minutes or until egg mixture is set.
Let stand 5 minutes before serving.
Serve with salsa.
