Finely chop chiles and mix with ham and 1 cup of the cheese.
Divide mixture into 4 equal parts and spread over 4 of the bread slices.
Top with remaining 4 bread slices to make 4 sandwiches.
Place each sandwich in a well-buttered shallow ramekin (1 1/2 to 2-cup size).
Lightly beat eggs, then beat in milk, chili powder, and dry mustard.
Pour egg mixture evenly over sandwiches; cover and refrigerate for at least 2 hours or until next day.
To bake, uncover and sprinkle sandwiches with remaining 1 cup cheese.
Set ramekins on a baking sheet and bake, uncovered, in a 350° oven for 40 to 45 minutes or until egg mixture is set and sandwiches are puffed in the center.
Let stand for about 5 minutes before serving.
