Chickpea Biscuits Recipe
Ingredients
| Large orange- 1 | ||
| Walnuts or pine nuts- 2 oz | ||
| Margerine or butter- 4 oz, softened | ||
| Cster sugar- 4 oz | ||
| Egg | 1 | |
| Chickpea flour | 8 Ounce | |
| Ground cinnamon | 1/2 Teaspoon | |
Directions
GETTING READY
1. Start by preheating the oven to 375°F and also grease the baking tray
2. Start grating rind from the orange and squeeze 2 teasp orange juice and coarsely chop the nuts
MAKING
3. In a bowl, place the margarine or butter and sugar, and cream it properly together, till mixture is soft and creamy, now beat in the egg and grated orange rind in the creamy mixture, add 1 teaspoon of chickpea flour if the mixture gets spoilt, this will make the mixture become smooth again.
4. In the same bowl, add in the chickpea flour and cinnamon , let it blend well with the mixture inside the bowl, then stir in the chopped nuts
5. On the baking tray, place spoonfuls of the mixture, while pouring leave some gaps, so they can spread properly , take a fork and use it ot flatten them
6. Finally bake in oven for 15-20 minutes, let it cool, once cooled down transer to a wire rack to cool completely
7. In a airtight container, store the biscuits and serve when desired
