Ingredients

 1 medium-sized onion, chopped
 Vegetable oil1 Tablespoon
 Can chickpeas1 15 Ounce, drained
 1 cup finely chopped canned or marinated artichoke hearts, drained
 Lemon juice1 Tablespoon
 Eggless mayonnaise1/2 Cup (16 tbs)
 Onion powder1/2 Teaspoon
 Celery1 Cup (16 tbs), chopped

Directions

Saute onion in vegetable oil until soft.
Process chickpeas in small batches in a blender or food processor.
Combine all ingredients and mix well.
Store in a tightly sealed container in the refrigerator.
