Chickpea Artichoke Spread Recipe
Ingredients
| 1 medium-sized onion, chopped | ||
| Vegetable oil | 1 Tablespoon | |
| Can chickpeas | 1 15 Ounce, drained | |
| 1 cup finely chopped canned or marinated artichoke hearts, drained | ||
| Lemon juice | 1 Tablespoon | |
| Eggless mayonnaise | 1/2 Cup (16 tbs) | |
| Onion powder | 1/2 Teaspoon | |
| Celery | 1 Cup (16 tbs), chopped | |
Directions
Saute onion in vegetable oil until soft.
Process chickpeas in small batches in a blender or food processor.
Combine all ingredients and mix well.
Store in a tightly sealed container in the refrigerator.
